We Love Broccoli!

Consuming broccoli can help to protect organs against blood sugar damage. When blood sugar (glucose) is chronically high, heart, eye, kidney, and nerve cells become inflamed. Repeated inflammation leads to permanent damage. Sulforaphane, a compound found in broccoli, was found to control oxidative damage to blood vessel cells up to 73%.

Here are a more reasons to include broccoli on your menu:
• It's a potent cancer fighter. Compounds in this vegetable stop ovarian, breast, and prostate cancer cells from spreading, cuts the risk of laryngeal cancer, and inhibits other cancers.

• It's rich in vitamin C and lutein, and high levels of those can cut the risk of eye damage.

• It's inexpensive, easy to cook, is easy to find year-round and is tasty. To get the most nutritional value, eat raw or near-raw by steaming it to preserve nutrients. Adding a little fat (evoo) will allow the body to best absorb nutrients.
